In addition to mozzarella, also the Treccia is much appreciated in the variant Smoked. The production follows all the phases of the traditional product but after shaping and manual weaving, the treccia intended for smoking is immersed in brine and then subjected to smoking by burning straw and shavings.

The final result, as for mozzarella, is a faded brown color, as well as an unmistakable taste and smell of natural smoking.
